“Traditional ingredients, contemporary techniques,” explains Warren when describing the philosophy behind the cuisine offered at Sweetgrass. Warren and Phoebe meet at chef school in the U.S. and followed through on Pheobe and her family’s dream of opening an aboriginal bistro in the Nations’ Capital. The combination of Pheobe’s Northern Ontario Cree heritage and Warren’s Jamaican upbringing provides a flair and warmth that is hard to find elsewhere. They offer traditional aboriginal food in a venue showcasing native art and culture, with a Jamaican splash where possible.
'Wachiya' is the Cree term for welcome. At Sweetgrass Aboriginal Bistro, the warm, intimate atmosphere, the displayed aboriginal art and the music of diverse aboriginal cultures expand the greeting and enhance the casual fine dining experience. Local organic game, wild birds and fish, accompanied by seasonal local produce is prepared using both traditional and innovative recipes in an open concept kitchen.
